The heating step helps to inactivate enzymes responsible for spoilage, removes oxygen (to stop growth of microbes that need air to live), increases viscosity and inactivates antibodies.
we use bacteria (called starter) to make yoghurt from boiled milk.
To make yogurt from boiled milk, you need to add a yogurt starter culture, which contains live active bacteria. Typically, this can be plain yogurt with live cultures or a commercial yogurt starter. After boiling and cooling the milk to about 110°F (43°C), mix in a small amount of the starter culture, then cover and let it incubate in a warm place for several hours until it thickens.
milk is boiled to kill of any unwanted microbes. bacteria are then added which release enzymes that make the milk go thick and slightly sour. flavouring can be added to yogurt to change the taste.
Yes, you can make your own yogurt at home using milk and a yogurt starter culture. Simply heat the milk, add the culture, and allow it to ferment at a warm temperature for several hours. Once the yogurt has set, refrigerate it before consuming.
Milk + Bacteria = Yogurt
Initially, you need to start with some boilt and cooled down milk, and then collect some yogurt starter, and mix it, and then let it remain overnight, and next morning you get yogurt
If you add yogurt culture to heated milk before it has been cooled down to the appropriate temperature (usually around 110°F or 43°C), the high heat will kill the live bacteria in the culture. This prevents fermentation from occurring, meaning the milk will not thicken or develop the tangy flavor characteristic of yogurt. To successfully make yogurt, it's essential to cool the milk after heating it to the correct temperature before adding the yogurt culture.
To make drinkable yogurt at home, mix plain yogurt with milk or water until you reach your desired consistency. You can also add sweeteners or flavorings if desired. Refrigerate before serving.
Recipes I have used, and that came with my yogurt maker say you can use: Whole milk 2% milk 1% milk Fat free milk Soy Milk or Almond milk to make yogurt. I have never seen a recipe using cream for yogurt making. So I think all purpose cream would make a heavy yogurt and so would whipping cream. When I made yogurt using 2% milk it is much lighter than yogurt make with whole milk and takes longer to cure. The yogurt maker suggested 10 hours for whole milk yogurt and 12 hours for 2% yogurt. Good luck.
Yogurt
To make a yogurt drink at home, blend together yogurt, milk, honey or sugar, and any desired fruits or flavorings. Adjust the ingredients to achieve the desired consistency and sweetness. Chill before serving.
Milk and starter. The starter is a small amount of yogurt. It is very easy to make, but you must have pasteurized milk, sterile containers, and an even temperature source usually supplied by a water bath in a moderately low temperature oven.
