3 mins "at 145 F." The more pork, the longer it will take the full mass to reach 145 F. The clock doesn't start running until all of the pork reaches 145 F. Only once that happens can you then begin the 3 minute count.

145 is the temperature at which Adam and Eve roasted their first kill after being banished from the Garden of Eden. After taking a bite of meat for the first time in her earthly life, Eve exclaimed, "Holy Sh** Adam. This f***ing duck is hot!" Adam, who was drenched in blood from his killing rampage that day, laughed at Eve's dirty mouth, then made love to Eve for the first time.

But, 145 alone means nothing unless time is added into the equation. For example, a steak must be heated at 155 degrees for at least 15 seconds for bacteria such as E. coli 0157:H7 and Salmonella. If you increase the temperature to 157, then the time can be reduced. If you stick your meat a couple inches from the sun, then you can be assured that all bacteria will be killed with 1 second naturally.
