Some sugars are metabolized while the other sugars are not because the body needs both the metabolized and the non-metabolized sugars. Yeast for instance usually metabolizes in two ways.
We either posses the enzyme to cleave the bond between two "sugar" monomers or we don't. If we cannot cleave a "sugar" into its individual components (monomers) then we cannot metabolize it.

In yogourt, the bacterial culture has already metabolized many of the sugars that would ferment in milk and cause it to spoil; so yogourt spoils more slowly than plain milk. Also some yogourts contain gelatin, which also delays spoilage.
