Not sure about the mirror covering, however the true meaning of stopping the clock is because back in history people generally died in their own home and doctors sometimes lived many towns away, so in order to give the doctor the exact time of death, people would stop their clocks.
Actually, it's more about allowing people their own time and place to mourn. You stop the clocks so that they don't feel they have to leave at a specific time - just when it feels right for them. And you cover the mirrors so that they don't see themselves looking sad or get distracted by their own appearance. Of course, over time the customs have gathered folklore to go with them as well.
