Some molds allow the baker to produce individual cakes, such as cup cakes. Also, some cake recipes bake more evenly in a mold such as a tube pan or Bundt pan that allows heat to circulate through the center of the cake as well as around the sides. In addition to all other reasons, it is simply fun to bake cakes in fancy molds.
