You can use it during the Battle Phase, but not during the Damage Step of the Battle Phase. So if you attacked, and an opponent used Mirror Force, then you can chain Trap Stun, as you are not yet in the Damage Step. However if the Damage Step was entered and a player used Nordic Relic Megingjord, you could not chain Trap Stun to it.

Yes, but not always. Remember there is only a limited amount of cards that can be activated during the Damage Step of the battle phase, and Torrential Tribute is not one of them. You cannot use Torrential Tribute in the damage step, and that is where Gorz is special summoned if you trigger him from battle damage (his token is summoned in the damage step too). However if you trigger him from effect damage and summon him, Torrential Tribute can be used in response - unless you take the effect damage during the damage step, in which case the above still applies.
When monsters attack during the Battle Phase, there are actually multiple "steps" that take place. When a player declares an attack, you enter the "Battle Step". If no card effects are activated that would stop the attack, you enter the "Damage Step" in which face-down monsters are flipped face-up and you actually calculate how much damage is done. It's at this point that a card that reads "during damage calculation only" can be activated or takes effect. The Damage Step is where it is determined which monster is destroyed by battle, and which player takes damage. So while Skyscraper's bonus 'only' counts during the Damage Step, that's exactly the right place to ensure the attacking E-HERO destroys a stronger attack target and survives battle. There's no concept of 'monster damage' in Yu-Gi-Oh, there is no penalty or consequence for losing the boost after Damage Calculation against a monster that was originally stronger. The damage step is the only step in which their calculated ATKs and DEFs are relevant, and during that, the E-HERO's ATK was higher.
