well originally, the committee was of John Adams and Jefferson, but Adams thought (and told Jefferson) that because

1) Nobody liked Adams (they all thought him to be argumentative and unfit, while everyone liked Jefferson who they thought was mild)

2) Jefferson was a Virginian and Adams was not. Back then, everyone looked up to VA as the oldest and best colony.

3) Jefferson could "write ten times better than [Adams]" could. Quote from Adams.

Officially, the writing of the Declaration was assigned to a committee made up of Jefferson, Roger Sherman, John Adams, Benjamin Franklin, and Robert Livingston. The members of the committee appreciated the fact that one person could better write a document than a group of people. It was recorded that they chose Jefferson because of his "peculiar felicity of style." In effect, they considered Jefferson the better writer in the group and their confidence in him was rewarded with the Declaration of Independence being completed in two weeks. Franklin suggested a few minor changes and congress made some alterations, the most important deleting an attack on the institution of slavery, to keep the support of the southern delegates.
Thomas Jefferson wrote most of the Declaration of Independence because he was a lawyer for many years and he had much experience in writing.
They chose Thomas Jefferson to write the Declaration of Independence because he was the best educated in writing.

Thomas Jefferson was choosen to write the Declaration of Independence because he was a man who knew the right words and he wrote much better than the man who was going to write it before.
