Because he is their ultimate ruler AND saviour.
Jewish AnswerOne of the types of moshiachim is a king. Therefore, the Christians called Jesus the King of the Jews because that's the type of moshiach that many of the Jews were hoping for 2000 years ago. However, this is specifically a Christian claim and is not accepted by Jews.
Jesus was in reality the king of the Jews. If you will look at the genealogy of Jesus in Matthew 1:6 David is listed as in the line of Jesus. David was the King that God chose to lead Israel and was told that from his line, his body there would always be a king that sat on the throne. As you scroll down the list you will see the Kings of Judah listed there. Even when Babylon conquered Judah and took them in captivity the list continues even though there was no actual King on the throne in Jerusalem and when Jesus was born there was still no actual king on the throne as the Romans ruled Israel.
There is still a list of the men who would have sat on the throne if Israel would have been a nation. Joseph, the lowly carpenter from Nazareth was in the Kingly line and Jesus being his (supposed son) legally had the right to be the King of the Jews. Jesus' claim to the throne of David was because Joseph was His legal parent (Not biologically).
Jesus is still king today and at the Second Coming will rule and reign from David's throne in Jerusalem for 1000 years.

Iesus Nazarenus Rex Iudaeorum (Jesus of Nazareth, King of the Jews)
The term "King of the Jews" was a term given to him by the Romans since they understood the term Messiah (like Jews at the time did) to refer to a terrestrial ruler. As a result, if Jesus was the Messiah as he claimed, he was effectively the "King of the Jews". However, the majority of Jews and both the Pharisaic and Sadducee Establishments would have rejected his claims to being the Messiah, so the Roman term is irrelevant to ascertaining Jews' true views of Jesus.
