Sweetened colas and similar drinks can be cloying and hard to drink, so there are two ways to make them tart, or easily drinkable, or both. The basic solution is carbonation, adding fizzy carbon dioxide gas that dissolves in the liquid. The carbonic acid offsets the sweetness without removing it. Soda contains the equivalent of up to 10 (or more) spoonfuls of granulated sugar. The other way to offset the sweetness is with phosphoric acid, or with citric acid, which is used in lemon-lime and some other soda flavors.

To add carbonation, carbon dioxide (CO2) is bubbled through water at high pressures. To see how much carbon dioxide is in soda, you only have to shake it, which increases the molecular energy, or heat it. Left open to the air, a soda will lose its carbonation more slowly, eventually going "flat" and having a less-agreeable taste.

In addition to sugar, many colas will contain the stimulant caffeine (the same active ingredient as in coffee). This can cause the body to use the sugar faster, but the body may still try to convert some of the excess sugar to fat and store it away.
