If you are caught stealing, you will probably face criminal charges for the offense. As part of that criminal charge, you may be ordered to pay restitution, or the value of the property back to the owner, as part of your sentence. If the state does not order restitution, the victim may choose to file a civil suit against you, seeking repayment for the stolen property.
