Because the invasion began in the early morning hours before the sun came up. Parachutists had to see the ground to know where they should land. Landing crafts had to see the shore in order to avoid all the barrackades that the Germans set up to stop the Americans. Most importantly, the Americans needed a shoreline to land on. They planned the invasion around a low tide with a full moon for lighting and safety reasons.

Why did Germany want to capture Dunkirk?

They didn't really want to capture Dunkirk. What they wanted to do was to destroy the allied army which went into Belgium to stop the German invasion through the low counties (i.e. Belgium Holland and Luxembourg). Having the Allied army go into Belgium was a part of the German plan to encircle the allied army (which they did around the town of Dunkirk) and then destroy the army before the allied evacuated its army to England by sea.

What was the German plan for the invasion of Normandy?

Most of the German generals had no plan for the invasion of Normandy. They were almost all fooled by the Allied strategy of building a fake army in Norfolk, apparently to attack Calais, far north of Normandy. Rommel was the only senior German who anticipated the attack in Normandy and he couldn't persuade his superiors of this. The heavily armed Omaha Beach was a product of Rommel's ingenuity.
