First, in the middle ages, castles were made to protect the population of the town or village they surrounded. Later they were used as a defence for the lord, and a show of power in the feudal system. Need more info?/ use http://www.middle-ages.org.uk/development-of-castles-in-the-middle-ages.htm

Basically, a castle is just a regular town, but fortified. They were developed so that villagers may be safe should their village come under siege, while at the same time being able to live for extended periods of time within the walls. They also improved from a Motte and bailey to a concentric castle because in the medieval times they found many flaws with the Motte and bailey such as it could burn easily as it was made of wood and they could not protect themselves from gun powder that came later in history so they started to build concentric castles as it was safer and they had a lot of defences to include in the designing blue print. although concentric castles were hard to build and took a long time they were worth it and I'm sure if William the conqueror was here now he would agree with me as he was the first man to bring in concentric castles and he was might i say a genius and you could learn from him.

Castles were designed primarily for defense. During the time when the first castles in Europe were built, many noble lords were warring with one another, so they started employing teams of laborers to build fortified homes, big enough to house the noble lord, his family, and all their retainers, with extra layers of defense around the outside. The first such fortified houses were called motte and bailey castles, and these were essentially a mansion built on a manmade hill surrounded by a ditch that was left behind from the excavation to build up the hill, as an extra layer of defense. Soon, people started filling the motte (ditch) with water by diverting a nearby stream to form a moat for improved defense, as this not only foiled siege towers and ladders (which had to be placed against the wall to be effective) but also prevented mining under the wall. Throughout the medieval period, as wars and castle sieges continued, architects continued to improve the defensive features of castles.
