Serfs had a choice. They had ample opportunity to run away. The problem was that the choice was not between freedom and slavery. It was a choice between freedom and security.

A serf who ran away had to feed himself and house himself. To do this he had to find and hold a job. He could lose his job at any time. He had no advocate, he had no protection in time of war, and he had no one who would feed him in a famine.

By contrast, a serf who was bound to the land was considered to have a right to the land. Not only was the serf not a slave who could be sold, the lord who owned the land did not even have a right to make the serf move away. The serf had a right to a place to live and fields to farm. He had to pay rent, in the form of labor, a part of the crop, or money. But he was entitled to protection, and in theory the lord had to feed him in time of famine.
