In Leviticus 1 is the instructions for giving burnt offerings. In verse 17 it says "He shall tear it open by the wings, not severing it completely,....
I don't know of any underlying reason other than that's the way God wanted it.

The book of Genesis mentions birds, generically, several times in the first 7 chapters. The first mention of a specific species of bird is in Genesis 8: 6 "After forty days, Noah opened a window and sent out a raven". Shortly afterwards, he sent out doves.

There are two references in the KJV, Isaiah 38:14 and Jeremiah 8:7. Both are to the bird. Although there were various technologies evident in Bible times, this did not include the cranes we have today.
Birds were created by God on the Fifth day (Genesis ch.1).

According to the Bible, animals that lived in the water were the first creatures created although it does not specify which specific animal was the very first one.
