Constellations don't really exist. The individual stars exist, but the patterns, and the shapes that we "see" in the sky, are entirely imaginary. You "get" constellations when your imagination forms shapes from the separate unconnected points of light in the sky. We human beings are excellent at seeing shapes and patterns; even when there are no shapes or patterns! We make them up in our minds.

Most constellations need a lot of imagination to be seen and different cultures have interpreted them differently. If you mean how many classic, named constellations visible from Earth, then the answer is 88 for the English-speaking world. The Chinese, Arabs, Polynesians, Hindus, and aboriginal Australians all have their own constellations as well.
The actual boundaries of the constellations do not change, but because all stars are moving, the shapes appear to change. e.g. Ursa Major (the Big Dipper) will be a different shape in 100,000 years as the stars that comprise it are all moving relative to each other.
You see different constellation because the constellations stay in place, but Earth moves so every season you are able to see different constellations.
