235/70 R16 are a standard size tire on 16" rims for the escape. But your Escape could have been delivered with 15" or upgraded 17" rims. So when you say "stock wheels", the answer is yes, they will as long as you have the matching 16" rims.

If it came with 235/65/16 tires originally, and you are replacing all the tires, it will fit but the speedometer will be slightly off (3.3%). I would also check the tire load rating, to make sure it equals or exceeds the stock tire rating.
Assuming you have stock wheels + tires, you need 4 struts, and keep your tires between 28 and 32psi. If by chance you Upgraded your wheels with 50 series tires, and wheels, happy stiff ride.
