if you mean the gasket between the thermostat housing and the hose connection bell yes you do but you should use a thermostat to keep the engine at constant operating temperature for which it was designed it will run more efficiently and last longer

You may have the thermostat in backwards. The spring side of the thermostat faces into the engine.
why do you want to. This would be a terrible idea as the 2.2 engines have head gasket issues. When the gasket weakens, the engine will start to overheat, and without a thermostat you wont know until the gasket blows and you ruin the entire engine. So you "can" run without a thermostat if you feel like blowing your engine.

generally if an engine overheats, but then does not overheat when heater is turned on, is a good indication that the engine thermostat is stuck and needs replacing

But running without a thermostat will cause the engine to be overcooled, because the restriction normally provided by the thermostat on the flow of coolant from the radiator around the engine has been removed, so too much coolant will flow and the engine will run too cool. If the engine is not up to temperature it uses more fuel, will produce less power, will wear more, and will not heat the cabin heater as well. So it's not a good idea to run without a thermostat. It is acceptable to run without a thermostat in an emergency, e.g. if the thermostat has failed and doesn't open, causing the engine to overheat. Just make sure you replace it as soon as you can. Running without the thermostat may also trip the check engine light to come on.
