Yes, with out the thermostat, the coolant can circulate to fast to effectively absorb and transfer any heat.

Updated answer,

The thermostat is to keep the engine running at a factory set predetermined temperature, without the thermostat the engine should run cooler.

Will a thermostat cause the car to overheat?

Thermostats determine when antifreeze enters the main cooling system. If the thermostat isn't working correctly, the antifreeze could enter the engine to late, (or not at all) resulting in an over heating engine. Another problem of having antifreeze enter the engine late, is that if your engine is very hot, possibly a little warmer than common, when the antifreeze enters the engine, the cold fluid could cause the engine block to cool down quickly, causing a cracked engine block.

Why does car overheat?

There could be many reasons. Not enough coolant or bad flow, faulty thermostat, low oil. If the coolant freezes then it will overheat. If your car continues to overheat then you should have the coolant flushed and thermostat replaced.

Can a thermostat stall a truck?

A thermostat cannot stall a vehicle directly. If your thermostat fails and will not open properly your vehicle will likely overheat. Overheating can do some very serious damage to your engine and the damage from the overheat can definitely disable the engine. Costly repairs or possibly replacement of the entire could be the result of a severe overheat. So, while your thermostat cannot directly stall your vehicle it may cause an overheat that could verywell stall your vehicle. That said, there are many cars today whose computers will deliberately limit the engines performance in the case of an overheat to help warn you of the problem, and give you time to get off the road before serious damage occurs. I am not aware that any manufacturers actually want the computer to shut the car down entirely upon an overheat as that could easily leave you stranded in traffic lanes. If someone knows different, perhaps they will answer.

What would cause a 63 dodge dart to overheat when a themostat is installed?

If you drive the Dart like I would (like a bat out of hell) the car would most likely overheat from fast acceleration, and more strain on the engine than what is needed. If you drive legaly, it could very well be the thermostat. Be sure that you use the correctly dilluted antifreeze.
