Once cookies are baked and cooled, they should be stored in an air-tight container. Placing a piece of soft bread or an apple slice in the container with the cookies will keep them soft and moist. Take care that the apple slice does not directly touch any cookies; it can be placed in a tea egg or some other permeable small container.

I store mine in an airtight container on a shelf in my pantry or in a drawer. As long as it's airtight, it will stay soft. In and airtight container. If it gets hard, put in a plastic bag with a slice of bread. This will help soften it up.
One homemade food that can last 2 weeks without being refrigerated is cookies. You do need to keep the cookies in a sealed container to keep them fresh.

Baking soda makes the cookies "keep together" and not spread, crumble or fall apart when you take them out of the oven.Yeast also works, but it makes the cookies taste bad. Yeast is mostly only used for bread and such.
I personally use yogurt in place of butter in banana bread and oatmeal cookies, any cookies actually. I have never tried muffins but assume it works about the same. For cookies it turns out very light and they puff up better, for bread it helps keep it moist and tastes great.
It gets dry and crusty. If you want to keep it soft, either put it in a container or on a plate with wrap over it.
