That is hard to say, I think they would have eaten BREAD-PUDDING because they ate BREAD and PUDDING, so YES they did eat BREAD-PUDDING.
Wheat bread can be made with buttermilk, but if you mean white buttermilk bread then wheat is probably healthier since it has more fiber.

Although I was only a baby at the time Bread Pudding has always been there. It was another way of using what you had and bread would go stale very quickly and cooking a Bread Pudding was another "something to eat" during the war.

you could but it wont work as well even though they are both starches so you would be better off using corn starch. you may want to even use something else besides flour or cornstarch to thicken it but i like my pudding thin:):):):):)
