After 8 hours, it's likely to have at least the beginnings of bacteria growth. If you want to risk it, make sure it's fully cooked. If not, throw it out and start over. It's up to you whether you want to risk getting sick.
if u you leave it on a counter sliced then the bacteria grows on it causing it to get rotten and really gross, but if you leave it in a fridge then it will very slowly turn brown
It depends on what food it is. The fungi will probably get food from the fridge rotting in a day or two but otherwise, I don't really know.

Yes certainly - I keep a small amount of butter in a covered container in the cupboard - I keep most of it in the fridge to maintain freshness & just cut off say 1/4 cup to keep out at room temp to use for spreads & on baked goods.
