Air must be removed from the container into which you place your salsa.

Have you seen the Food Saver on TV or in stores? (or similar) they come with attachments that allow you to suck the air out of the jar.

Of course you can can the old fashioned way, Google "Canning Preserving Tomatoes" and you'll find a bunch of websites that give directions or check an old (1970s at least) cookbook.

Tomatoes are acidic and are preserved differently than jelly or pickles, etc so make sure you're reading the right directions. I also assumed your salsa was primarily tomato.
