Ingredients1 1/2 c Bulgur3 c Boiling water1/4 c Miso3 tb Water1 tb Honey2 ts Sesame oil2 tb Safflower oil1 md Eggplant, peeled & diced1 ea Garlic clove1 ts Minced fresh ginger1/4 lb Pressed tofu, diced1 bn Green onions, sliced1/2 ts Hot red pepper flakesPlace bulgur in a heat-proof serving dish. Pour on boiling water & let stand while preparing the other ingredients. Mix together miso, water, honey & sesame oil. Set aside. Heat oil in a wok & saute eggplant for 5 minutes, stirring.
