First, place 1 cup mayonnaise, 2 teaspoons Dijon mustard, 2 crushed garlic cloves, and salt & pepper in a bowl. Stir to combine. Slowly pour 1.4 cup lemon juice into mixture. Stop at desired consistency. Place mixture into a food processor. On low, slowly add 1 ½ cups of olive oil. Blend. Next, add ½ Parmesan cheese. Pulse blender 3-5 times. Sliced anchovies or anchovy paste can be added to mixture as well. Serve chilled.
