The best receipies for bran muffins include Whole Wheat Flour, Bran and something to give a crunch when you bit in to them such as walnuts. Mix the ingredients and remember to leave to rest so the bran has time to stack up the liquid.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon grated nutmeg
  • 1 teaspoon ground cardamom
  • 3 eggs
  • 2/3 cup firmly packed light or dark brown sugar
  • 2 teaspoons vanilla extract
  • 1/3 cup vegetable oil
  • 2 cups applesauce
  • 3 cups grated carrots
  • 1 cup raisins
  • Grated peel (no white attached) of 2 Oranges
  • Preheat the oven to 350 degrees F. Lightly spray muffin tins with cooking spray containing flour.
  • In a large bowl, sift together the flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cardamom. In a medium bowl, combine the eggs, brown sugar, and vanilla, mixing well. Stir in the vegetable oil, applesauce, carrots, raisins, and orange peel. Add to the flour and mix just until incorporated. Pour into the prepared muffin tins and bake until a tester inserted comes out clean, about 20 minutes. Cool 10 minutes on a wire rack, then invert and cool completely.

Makes 18 large or 36 small muffins

  • 1 1/2 cups raw bran
  • 1/4 cup wheat germ
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon Lite Salt or less
  • 1 cup shredded carrots
  • 1 cup mixed dried fruit (raisins, chopped Prunes
  • or apricots) 1/2 cup walnuts or almonds chopped
  • 2 egg whites
  • 1/2 cup molasses
  • 3 tablespoons oil

Preheat oven to 400 degrees. In bowl mix the first 6 ingredients. Add carrots, fruit and nuts, and distribute evenly. Make a well in the center. In another bowl beat egg whites lightly and mix in milk, molasses and oil. Pour all at once into the dry ingredients and stir just to moisten. Pour into lightly oiled or paper-lined muffin tins about 3/4 full. Bake for 15-20 minutes. Makes 18 muffins.

  • 5 c All-purpose flour

  • 1 1/2 c Brown sugar
  • 5 ts Baking soda
  • 1 tb Pumpkin spice
  • 2 ts Salt
  • 4 Eggs beaten
  • 1 c Melted shortening or
  • margarine or 1 c Vegetable oil
  • 2 ts Vanilla
  • 1 qt Buttermilk

  • 4 egg white beaten-or substitute
  • 2 tablespoons honey
  • 1 teaspoon vanilla

  • 1/3 c MILK
  • 2/3 c APPLESAUCE
  • 1/4 c BUTTER, MELTED

Stir together flour, baking powder, salt, sugar and bran cereal. In another bowl beat egg well and then add milk, applesauce, and melted butter. Mix the egg mixture and flour mixture just until they are well blended. Divide the batter among 12 greased muffin tin cups. Each cup should be about 2/3 full. Bake at 400 degrees F for about 20 minutes. You can test to see if the muffins are done by sticking a toothpick into the center of them. If the toothpick comes out clean, the muffins are done. Otherwise, let them bake for another 5 minutes and try again.

Measure dry ingredients into a large bowl. Stir in carrots and orange rind In a small bowl, beat eggs with milk, molasses and melted butter. Add to dry ingredients all at once, stirring just to moisten. Fold in raisins and nuts. Fill greased muffin tins 3/4 full and bake at 400 for 25 minutes. Makes 12 large muffins.
