the promblem is the oil pump.
The oil pressure sensor, on a 2008 Chevrolet Impala, is located on the front of the engine. The sensor will be just above the oil pan.

I just had this problem on my 2005 Impala. My fix was a new thermostat. I also had the symptom of the engine temp swinging from hot to cold.
It can be numerous things. If the check engine light is on then you need to take it to a repair shop and have them diagnosis it for you. You may have to have the cooling system pressure tested for leaks.
