with my 92 corvette the temp while driving is usually between 198 and 207.---but when stopped the temp goes up to 228 then the electric fan should kick on. i researched the same stuff--- some say of a way to convert the temp sensor to kick the fan on at a cooler temp---don't know---peace
Next to the thermostat housing.
The temp sensor on the sc300 is at the front of the engine. It is mounted near the water pump and timing chain housing.
it should be 210 but some chevys differ

Follow the radiator hose to the block on the drivers side. It will be clamped to a hose connection where the t-stat is. Right next to that connection on the right is the PCM coolant temp sensor.
possibly a engine temp sensor. need more info, this is a good start.
Zerex antifreeze coolant
You probably have a bad temperature sensor. TS reads the temp of the coolant and turns the fans on when hot enough. Without it the fans arent controlled by temp. When you turn on the AC the fans always come on.
may have imbalance in coolant mixture, may have bad water pump, may have bad thermostat. check each.
