Your 2000 Jimmy may have died while driving due to several potential issues, such as a fuel delivery problem, an electrical failure, or a faulty ignition system. Common culprits include a clogged fuel filter, a failing fuel pump, or a dead battery. Since it cranks but won't start, checking for fuel pressure and spark at the spark plugs would be a good next step. If these check out, it may be worth investigating the engine’s sensors or the ignition system.
fuel pump?
Check the cars ignition coil and crank sensor. Either of these could be overheating and causing the car to not start until it sits for a while.
Problem with Crank sensor will cause 2001 Grand Prix not start when warm until it cool down? will this problem also cause vehicle to stall while driving?

Check the crank angle sensor usually about $150 to replace
IF... the crank sensor was the problem then it might. However, it is unlikely. I agree, although they are known to crack, It usually results in a no start condition from what I have seen.
yes
I have a1993 Mazda 626 v6 crank wont start and no sparks
Crank trigger
Happened to me .. it was the crank sensor. Pretty inexpensive to fix
One reason that a 2000 GMC Jimmy engine stalls while driving could be your filter needing to be changed. The problem could also be a bad sensor.
you might have blow out a head or over headed the engine
