It is never a good idea to remove the thermostat especially on a fuel injected engine. The computer relies on it to heat the engine so it will not run rich. The cooling fans can not work as they depend on the engine to warm up. Check the coolant in the radiator because it can be low and you still have water in the recovery jug. You may have a bad radiator or cooling fans. There is a TSB with Dodge relating to the fan controller. It is located behind the front bumper.
