most times you will notice low water level, and white smoke (steam) coming out tailpipe. Power loss and hard starts also. Easiest way to find out is to do a compretion test. Then not only will you find out if cracked, but you'll know right off what cylinder the the crack is in on the head.

The only positive way to tell if a cylinder head is cracked is to remove it and have a specialist pressure test it.

To tell if the head is cracked, you have to remove it from the car, so you will replace the head gasket, anyway. Take the head to a machine shop and have it magnafluxed to see if it's cracked.
