The key to solar ovens is basically a four-step equation for you to solve. You need reflectivity, directivity, a heat sink and "containment" to stop moving air. Reflectors are needed to redirect the sun's rays. The mirrors must be pointed in what is generally the "correct" direction, too. Third, you need a big black heat absorbing pot or vessel to put your goodies in. Lastly, it's a good idea (great, actually) to minimize air movement around the cooking unit. Moving air will act as a convection mechanism to remove heat from your pot. You don't run your oven with the door open when you're cooking, do you? No, you don't, and you know why.
