The reason if you do that is because, flowers have itty bitty tubes in their stems that suck all the nutrients out of the ground helping it grow, if the water is is colored then the flower will suck up the colored water feed it the water then the flower will be that color. The food colouring itself does not have any affect on the growth of the plant, it does however colour or "stain" the tissues of the plant - sometimes making them easier to see under a microscope. If certain flowers (normally cut flowers) are watered with water containing food colouring, the colour of the flowers can be artificially manipulated (this is sometimes done with chrysanthemums, roses and carnations). The colour change is not permanent as it is not a genetic characteristic, only a physical change due to the coloured pigment.
