There are two main ways.

The first is by using the photovoltaic effect (you could look it up) to produce electricity directly. This is how solar cells work.

The second is by using the incoming solar energy to boil water, at which point it becomes exactly the same as how electricity is produced in a coal, natural gas, or nuclear power plant: the steam turns a turbine, which turns a generator, which produces electricity. The advantage here is that you can use exactly the same kind of turbine and generator as you'd use in any other power plant, you don't need special equipment... other than a bunch of mirrors to bounce light at your boiler.
