There are large numbers of planes caught in flight within Google Earth imagery ranging from small prop planes to 747s.
A continuously updated collection of placemarks of all known planes in flight right now in Google Earth is available. (see below)
Note that Google is continuously updating its imagery so sometimes when looking for a plane caught in Google Earth last month or last year may not appear today so you may have to enable 'Historical Imagery' to see it again. Check for this option in View menu.
If, however, you want to see the live real-time position updates of aircraft flying then there are KML feeds to see this. Flightwise, for example, provides this capability.
See related links below for the planes in-flight database or Flightwise real-time tracking.

Google imagery is updated often and even if a plane is caught in flight on a given image -the next update for that area will no longer have the plane. Google Earth is more suited for seeing planes in flight especially with its 'Historical Imagery' so you can return to a particular place and time to see a plane caught in flight. The short answer is that you can see planes in flight on Google Maps and Google Earth. The long answer is that I am sure Google data is pulled from both satellite data and "flown" images. Flown images are taken at lower altitude so commercial planes are likely routed over the one taking the images.
In August 2007, Google Earth v4.2 introduced a Flight Simulator as an "easter egg". This undocumented hidden feature quickly became very popular as word spread. As of April 2008 in Google Earth v4.3 the Flight Simulator became an official feature.
