Nothing good. Do NOT run an engine like this. Oil and water don't mix and, in an engine's combustion chambers, water is very abrasive and can cause damage to everything from sensors to seals to pistons and cylinders. Plus water will also bind up the oil and prevent it from lubricating anything which makes a bad situation worse.

Of course! The radiator is designed to hold a mix of water and coolant, but at a pinch just water will do. It's not a good idea to do this for too long though as it can cause corrosion in the radiator and engine.
