Only the earliest Sunfires had a transaxle dipstick. On the newer models, there is a threaded plug on the side of the transaxle. To check the fluid, remove the plug and stick your finger in the hole. If it comes out wet, the fluid level is OK. If it comes out dry, add fluid until your finger comes out wet. Crude, but effective. Another option is, for the next oil change, take the car to a full service oil change place which also checks all the fluids . Make sure they check the transaxle.
It depends on if it is a manual transaxle or an automatic transaxle. If it is a manual transaxle, you can use any SG-rated 5W30 motor oil. If it is an automatic transaxle, then you need DEXRON II Automatic Transmission Fluid.

If you are going to simply drain and fill the transaxle, find the drain plugon the bottom of the transaxle--should be a 24mm head--remove the plug and let the fluid drain. Install new fluid through dipstick passage (use only Hyundai SP3 fluid!), should take about 4qts. Checked fluid level with vehicle running and gear shift selector in neutral position. This transaxle does not have a servicable filter, even if there is an oil filter mounted to the top of the transaxle, it is a lifetime filter. Depending on milage you may want to take the vehicle to a shop and have a transaxle flush performed
On a 2000 Mercury Sable : The automatic transaxle ( transmission ) fluid level dipstick would be near the firewall just to the drivers side of the engine ( where the transaxle is bolted to the engine )
