Go outside on a clear night in the northern hemisphere. One of the easiest constellations to recognize is the Big Dipper. (Well, actually the "Big Dipper" is an asterism, which is a smaller grouping of stars within a constellation. The Big Dipper is part of the Great Bear, or in latin, Ursa Major.) The two stars at the edge of the bowl away from the handle are Dubhe and Merak.

Follow the line between these two "pointer" stars out from the dipper, seven times as far as the apparent distance between them. There aren't many stars out there, but the brightest one in that part of the sky is Polaris, the North Star. Wherever you are, looking at that star gives you the direction of "true north" within a half-degree or so.

Would one star be more useful for navigation than any of the others?

The Pole Star or Polaris which is also called the north star, in the constellation of Canis Major is exactly above the Geographic North Pole of Earth. If you spot this star in the heavens, then you can say that you are facing north. However this star can't be seen in the southern hemisphere. So the southern hemisphere can locate south by spotting the southern cross star which is exactly opposite to the polaris. At Daytime one can get the directions by seeing the sun.

Is the North star the same as Polaris?

Yes, Polaris in Ursa Minor is the "North Star" located using the stars of the Big Dipper (Ursa Major). It is currently the closest bright star to the celestial pole, i.e. the point directly above the Earth's North Pole. The pole star for the South Pole is currently Sigma Octantis in the constellation Octans.
