Monosaccharides are simple sugars which are made of a single sugar molecule eg glucose, lactose, fructose.

Disaccharides are double sugars, formed from two monosaccharides linked together by a chemical bond (a glycosidic bond) eg lactose (milk sugar) consists of glucose and galactose combined together.

Polysaccharides ("many" sugars) are made of many (eg hundreds) monosaccharides linked together by glycosidic bonds eg starch and cellulose are made from glucose molecules linked to form long chains.
