To improve our metabolism. If we were just one big bubble, we would never have enough place on our surface to exchange enough O2, CO2, and the like to be able to live. But if you calculate the surface of the millions of small cells, you'll get a multiple of the surface than that of the big bubble.
if we didnt have cells we wouldnt be alive. cells are a big part in out lives : )
