To keep the water in the tank oxygenated. Fish breathe the oxygen out of the water and it needs to be replaced somehow. Replacing the water will do this but in large aquariums this is not practical. So adding bubble bars and stones replaces the oxygen in the water so the fish can breathe.

Water plants also have very flexible structures so that the strong currents doesn't break them. Some plants also have floating seeds so the seed isn't submerged before its ready.
