Oxygen can be gathered by several means. One of which is the electrolysis of water in an inverted tube. As oxygen is split from the water, it will fill the tube and displace the water. You then have collected oxygen. Industrial processes usually use stages of filtering in order to get pure oxygen using various filter material (some that absorb other gases as well). Do a search on bottling processes for gas companies and you will probably find some processes used.

Free oxygen is created in nature by the splitting of water during oxygenic photosynthesis. Green algae and cyanobacteria found in marine environments provide around 70% of the free oxygen on Earth and the rest is produced by terrestrial plants.

You get oxygen from plants because they release oxygen and we release carbon dioxide for the plants. :)
