Because ionic compounds are ere easily converted into their corresponding ions in water. The bond between oxygen and hydrogen in water(H20) is polarized. So oxygen has a small negative charge and hydrogen has a small positive charge even though they are covalent bonds.These are called polarized covalent bonds. The oxygen attracts the positive ion of the compound and hydrogen attracts the negative ion. So the ionic bond is broken and the compound dissolves in water.

Ionic solids dissolve in water because ionic bonds are very weak and can easily be broken apart, especially by water.
