To prevent it from reacting with oxygen and rusting.
It is not recommended to use aluminium saucepans for making jam, as the high acidity of fruits can react with aluminium and affect the taste of the jam. It is better to use stainless steel or enamel-coated saucepans for making jam to ensure a safe and flavorful outcome.
Sugar acts as a preservative in jam-making by creating a high osmotic environment that inhibits the growth of microorganisms. It also helps to thicken the jam and enhance its flavor.
Making jam involves both chemical and physical changes. Chemical changes occur when the fruit's natural sugars break down during cooking, leading to caramelization and the creation of new complex flavors. Physical changes occur when the mixture thickens as pectin molecules form a gel-like structure to give the jam its characteristic texture.
While icing is commonly used as glue for constructing baked goods like gingerbread houses or layer cakes, you can also use jam, jelly, caramel sauce, peanut butter, or melted chocolate as alternatives. Just make sure the consistency is thick enough to hold the pieces in place.
The specific heat capacity is the energy density of a substance. Since jam has a higher specific heat capacity than the pie crust it is contained in, this is why the contents of a pie are always much hotter than the pie itself.

sur-gel is a brand name. Pectin is the ingredient. Pectin is the ingredient used in jam making, it helps set the jam.
Pectin is used in preserving fruits for jam and jelly making. This is used with paraffin wax to seal the tops of canned fruit and jelly.
Jam is primarily composed of sugar, making it a carbohydrate.
When choosing a jam pan for making homemade preserves, consider a pan with a thick bottom to prevent burning, a wide surface area for evaporation, and sturdy handles for easy handling. Opt for a pan made of stainless steel or copper for even heat distribution.
Jam can be used for toast, and my favorite, PB&J.

Since Jam making uses natural acids. Metal+Acid ------>salt and hydrogen. Since aluminum is high in the reactivity series it will react with the acid from the fruit quickly forming metal based salts in you jam. A steel pan which is lower in the reactivity series will not produce salt quickly so your jam wont be ruined.
no
go nuts experimenting (:
During the jam preparation some chemical reactions can be involved.
It depends on what kind of jam your making. Very Berry jam is made by putting a Very Berry in pot to delute the fruit into a jam. Hope I helped! :D
