There is no separate PC version of the Apple TV as it connects your TV to your network at home (usually wireless but can use an Ethernet wire) which can be used by Macs or PCs or both. You will need the Windows version of iTunes installed if you want to stream media from a PC to the Apple TV. (See links below)

You cannot downgrade any Apple products (legally). Also, I don't think there is an iOS 6 for Apple TV yet. I do understand though, it is confusing. The iOS version number for all other iDevices does not sync up with the version number on Apple TV for some reason. They might as well not call it iOS.

Apple TV's YouTube application is streaming only. Also on the Apple TV specifically there is no functionality to favorite, you have to do that from the website or mobile version of YouTube then login to your account and view them later.

AirPlay will not work with the old version of Apple TV. It requires the new Apple TV or some other equipment that can connects with AirPlay (such as audio equipment) that can play your digital files as AirPlay streams them from your computer.
