Mostly, yes, but it will also destroy the omega-3 and omega-9 and whatever other polyunsaturated fats as well (and some monounsaturated as well, I think). Polyunsaturated fats are not very stable and at temperatures over 200 degrees will break down. That does not in any ways make them healthier. When fats break down, they become free radicals, which will wreak all sorts of oxidative stress on your body, increasing risk for Heart disease, stroke and all sorts of illnesses.
If you dry roast the peanuts yourself at 170 degrees Fahrenheit (it'll take a good 24 hours or so to completely roast them), the fats won't break down, but they're probably still contaminated with aflotoxin anyways.
