I cook five pounds for eight hours on low heat... that way they are tender
You can cook on high for 4-5 hours or on low for 8-10 hours. Either will produce very tender turkey.

Six to 10 pounds: 1 1/4 to 1 3/4 hours. 10 to 14 pounds: 1 3/4 to 2 1/4 hours. (that's at 300 degrees)
Some experts say a whole turkey should cook 3-4 hours, depending on the size. If it's just turkey breast though, you should probably cook it for much less and monitor it. Turkey breast can dry out really easily.
