I have found that the flavor of leftover chicken goes downhill pretty quickly. It seems that the flavor of meat left on the bones stales more quickly than when the meat is cut off. For best flavor, stew the carcass as soon as possible. I like to use a crock pot. I can throw everything in the crock pot at night and its ready to work with in the morning.
