If you put salt in the pot and allow it to set for a bit, the salt will spread itself out into the food. It will taste better, and people won't feel like they need as much salt on the food. This is a good thing, especially if those eating the food have high blood pressure, as salt should be avoided with this condition. I usually salt my food as it is cooking and also leave salt out for those who enjoy a saltier flavor.
