Buy a smaller bottle, if you must. And who knows, having a half-filled bottle of vanilla on your shelf that's only four or five years old may inspire you to bake a little more often. Mix it everyday for several days. I use vanilla sugar everytime I am baking and it calls for at least 1 teaspoon (usually standard) of vanilla and 1 cup of sugar. I do not know what the shelf life is probably because it never lasts that long.
