By backing the choke out I assume you mean turning it off. If it stalls when the choke is off but runs while it is on then you have an air leak somewhere

The choke lever should be down for the choke to be off. In the raised position is choke on.
The Choke simple modifies the air/fuel mixture. It shouldn't be a problem, its just harder on the engine. So just listen to see if the sounds continue, and if they do, take it to a mechanic, and learn the lesson to take the choke off next time. If not, learn the lesson to take the choke off anyways
Choke, in car terms, is adjusting how much air flows into the engine.
Sounds to me like you need to replace the choke pull off.
